Ingredients for 4 servings:
- 1 onion(s)
- 1 tbsp olive oil
- 160 g rice
- 500 ml tomato juice
- 150 ml vegetable stock
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 10 olives, green, if you like
- salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Dice the onion and sauté in olive oil until translucent. Add the rice and sauté briefly. Deglaze everything with tomato juice and stock, bring to a boil, then simmer for about 20 minutes. Meanwhile, peel and dice the bell peppers. Add the diced peppers to the rice and cook for another 10 minutes. Season to taste with salt and pepper. If you like, you can also add the olives.
