Mediterranean tomato soup

Ingredients for 2 servings:

  • 50g salami
  • 1 onion(s)
  • 1 tbsp olive oil
  • 2 class can/n tomatoes (Pizza tomatoes)
  • salt and pepper
  • Cayenne pepper
  • 50 g olives, black pitted
  • ½ bunch basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the salami into small cubes, peel and finely chop the onion, and roughly chop the olives. Sauté the salami and onion in the heated oil for about 3 minutes. Add the tomatoes, bring to a boil, and simmer over low heat for about 10 minutes. Add the chopped olives and season with salt, pepper, and cayenne pepper. Pick the basil leaves, finely chop them, sprinkle them over the soup, and serve immediately.
