Mega Kofta with vegetables

Ingredients for 3 servings:

  • 500 g minced beef
  • 2 eggs
  • 2 slices of Gouda
  • 1 large zucchini
  • 200 g mushrooms, fresh
  • 3 m.-sized carrot(s)
  • 1 large onion(s), red
  • salt and pepper
  • 1 clove(s) garlic
  • ½ small lemon(s) or lime, the juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Kofte, minced meat rolls

Preheat the oven to just under 190 degrees Celsius (375 degrees Fahrenheit). Cut the cheese into small pieces and finely dice the onion. Place the raw minced meat in a large bowl and mix well with the eggs, onions, and cheese. Season well with salt and pepper. Form the minced meat into large, oblong lumps of meat by hand and place them side by side in a large baking dish. The baking dish does not need to be greased. Cut the vegetables into medium-sized pieces. Mix everything in a bowl with a little lemon juice, the crushed garlic clove, salt, and pepper. The lemon juice is not necessarily a seasoning, but rather a moisturizer to prevent the vegetables from drying out in the oven. Divide the vegetable mixture between the kofta and place the baking dish in the preheated oven. Depending on the thickness and desired browning of the kofta, the cooking time varies between 40 and just under 60 minutes.
