Moist Italian apple pie
Beat the butter until peaks form. Then add the sugar, salt, and vanilla sugar and continue beating. Gradually add the eggs and beat with a hand mixer until the mixture is light and fluffy. Sift the flour, cocoa powder, cinnamon, and baking powder over the mixture and mix everything well. Then fold in the chopped walnuts. Preheat the oven to 180°C (top/bottom heat). Line a springform pan (approx. 24 cm diameter) with baking paper. Peel the apples and cut them into eighths. Arrange the apple pieces tightly on the bottom of the pan and pour the batter over them. Place in the lower half of the hot oven. Bake for about 50 minutes. The cake will be very moist around the apples and have a honey-like sweetness. That’s a good thing! Tips: You can sprinkle the cake with powdered sugar before serving – I would advise against chocolate icing. It also tastes delicious with a dollop of whipped cream.
