Ingredients for 1 servings:

  • 2 red bell peppers
  • 2 m.-large chicory
  • 2 m.-sized eggs
  • 1 tsp oil
  • e.g. salt and pepper
  • Paprika powder
  • curry powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Clean the chicory and bell peppers and cut them into bite-sized cubes. Heat the oil in a non-stick pan and sauté the vegetables until they reach the desired tenderness. In the meantime, whisk the eggs together and set aside. When the vegetables are almost done, season with the spices, then pour the beaten egg over them and continue cooking, stirring, until the egg is set. Season again, arrange the vegetables on the plate, and serve. If you like, you can also add a few herbs like parsley and/or chives.
