Melon and ham rolls with green asparagus

Ingredients for 1 servings:

  • 10 slices of Serrano ham
  • 10 stalk(s) asparagus, green
  • 10 stalks of chives
  • 1 honeydew melon(s), preferably ripe
  • ½ tsp sugar
  • 1 dash of lime juice
  • e.g. salt and pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Peel the lower third of the green asparagus and remove the woody end. Cut each stalk into three equal pieces. Blanch the asparagus in boiling water for 3 minutes, remove from the water, and refresh with cold water. Set aside. Blanch the chives in the water to soften them. Remove and let cool. Cut the honeydew melon into strips the same length as the asparagus, approximately 0.5 x 0.5 cm thick. Heat a little oil in a pan. Briefly fry the asparagus and add the sugar and lime juice. Season with salt and pepper to taste. Remove from the pan and let cool slightly. Fold the ham lengthwise to create a double layer. Place 3 pieces of asparagus and two pieces of honeydew melon into each slice of ham, roll up, and tie each one with a chive.
