Ingredients for 4 servings:
- ½ watermelon(s)
- ½ organic lemon(s), zest and juice
- 1 tsp rosemary or mint, fresh, finely chopped
- 2 tbsp forest honey
- 200 g feta cheese
- 3 tbsp olive oil
- salt and pepper
- possibly chili flakes
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel the watermelon and cut into approximately 1 cm cubes. Cut the feta cheese into approximately 1 cm cubes. For the marinade, combine the honey, lemon juice and zest, rosemary or mint, and oil. Season with salt and pepper. If you like it a little spicier, you can add chili flakes. Pour the marinade over the melon and feta cheese, mix gently, and serve immediately.
