Ingredients for 6 servings:

  • 100 g onion(s)
  • 500 g Emmental cheese
  • 4 tbsp mustard, medium hot
  • 2 tsp coriander powder
  • 1 tsp brown sugar
  • ⅛ liter oil, neutral
  • 2 tbsp fruit vinegar, e.g. B. Apple cider vinegar
  • 1 kg pear(s), ripe

Recipe from the 1980s

Peel and finely dice the onions. Cut the Emmental cheese into sticks. Mix the mustard, coriander, sugar, oil, and fruit vinegar to make a salad dressing. Peel and quarter the pears. Cut out the cores and cut the quarters into thin slices crosswise. Immediately mix into the dressing along with the cheese sticks and onions. Let the salad marinate for about an hour. The specified amount is suitable for a larger party. For everyday use, we recommend preparing half the amount. The salad tastes just as good the next day. You can garnish it with blueberries, walnuts, chives, or spring onions.
