Melon Salad with Garlic Prawns

- 12 piece Organic prawns
- 250 g Watermelon weighed without the peel
- 0,5 piece Papaya fresh
- 1 medium-sized Tomato
- 1 piece Shallot
- 0,25 piece Cucumber
- 1 piece Chili
- 2 piece Limes
- Fresh coriander
- 2 piece Peeled garlic clove
- 2 tablespoon Extra virgin olive oil
- Salt
- Black pepper from the mill
- Quarter the tomato and cucumber and remove the seeds. Also remove the seeds from the papaya and peel. Peel the shallot. Finely dice shallot, melon, papaya, cucumber, tomato and chilli.
- Squeeze the limes. Mix a dressing from the juice and 1 tablespoon of olive oil, pepper and salt.
- Mix all salad ingredients with the dressing and leave to marinate in the refrigerator for at least 30 minutes.
- Peel the prawns and fry them in the remaining oil, fry the halved cloves of garlic and season everything with salt and pepper.
- Arrange the prawns over the melon salad and sprinkle with finely chopped coriander.
