Menemen – Turkish pepper and tomato pan

Ingredients for 3 servings:

  • 5 peppers (long, mild pointed peppers)
  • 2 onions
  • 2 tbsp olive oil
  • 200 g minced beef or 2 sucuk (Turkish garlic sausage)
  • 4 tomatoes
  • salt and pepper
  • 3 eggs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash the peppers and cut them into thin rings. Peel the onions and slice them. Heat 1 tablespoon of oil in a pan and fry the peppers and onions until soft. Remove everything from the pan briefly. Brown the minced meat with the remaining oil, or slice and fry the sucuk. Then add the pepper and onion mixture to the minced meat. Wash the tomatoes, finely chop them, and mix them in. Season with salt and pepper. Finally, scatter the eggs over the vegetables and minced meat, but do not stir. Cover the pan and simmer over low heat until the eggs set. Tastes best with bread, but can also be used as a dip.
