Ingredients for 20 servings:

  • 4 eggs, of which the egg whites approx. 130-145 g
  • 200 g sugar, fine
  • Lemon juice, a few drops

Beat the cold egg whites until very stiff peaks form, adding a few drops of lemon juice (for extra stability). Gradually add half of the sugar, whisking vigorously, until the mixture is stiff enough to cut. Fold in the remaining sugar all at once, whisking vigorously until the mixture is very stiff, smooth, and glossy. Use immediately. Using a piping bag or cake syringe, pipe various shapes onto a baking sheet lined with parchment paper. You can also color small amounts with food coloring and pipe them onto the baking sheet as rings, hearts, or pretzels—the sky’s the limit. Then garnish with cookies and decorative beads. Once they’re done, they’ll be a slightly different but delicious Christmas tree decoration. Let them dry slowly at low heat (100-120°C) in a preheated oven. 60-90 minutes, depending on the size. The meringues/meringues must NOT brown.
