Ingredients for 4 servings:

  • 1 large onion(s) (vegetable onion)
  • 1 bulb(s) garlic
  • 3 chili peppers
  • 1 bunch of flat-leaf parsley
  • 2 tsp salt
  • 2 orange(s), the juice
  • 1 lemon(s), the juice

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Slice the onion into fairly thin rings. Squeeze the garlic cloves from the bulb, peel, and roughly chop. Cut the chilies into coarse rings. Roughly chop the parsley as well. Mix the onions, garlic, chilies, and parsley, season with salt, let stand for 40 minutes, rinse briefly, and dry thoroughly. Mash the mixture slightly. Stir in the remaining ingredients. The SABO BBQ marinade is great with meat, poultry, fish, and seafood.
