Meringue nut slices

Ingredients for 1 servings:

  • 200 g flour
  • 100 g powdered sugar
  • 100 g butter
  • 2 egg yolks
  • 200 g jelly, red currant
  • 3 egg whites
  • 200 g powdered sugar
  • 200 g hazelnuts, ground
  • Cake icing

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

For the dough, knead the flour, powdered sugar, butter, and egg yolks. Wrap the dough in cling film and refrigerate for 15 minutes. Then roll the dough out on a baking sheet lined with baking paper and spread with the blackcurrant jelly. Beat the egg whites until stiff peaks form and gradually add the powdered sugar. Fold in the ground hazelnuts. Spread the meringue evenly over the jelly layer. Bake in a preheated oven (electric oven 160°C, gas mark 2, fan oven 140°C) for about 30 minutes until light brown. Reduce the heat after 15 minutes if necessary! Let cool slightly. Then you can either spread it with melted chocolate or decorate it with jam and halved hazelnuts. While still warm, cut it into slices or triangles. It’s very important to let the slices/corners cool for a few hours before placing them in biscuit tins. This keeps the slices nice and soft!
