Metaxa sauce

Ingredients for 1 servings:

  • 4 onions, red
  • 8 cloves garlic
  • 150 g tomato paste
  • 500 ml vegetable stock
  • 1 tsp sugar
  • 3 cl Metaxa
  • 200 ml cream
  • olive oil
  • Salt and pepper from the mill, coarse
  • Paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Dice the onions and finely chop the garlic. Heat the olive oil in a pan and fry the onions until brisk. Then add the garlic and tomato paste and continue frying over high heat. Continue stirring well, making sure nothing burns. Add the sugar and deglaze with the vegetable stock. Add a generous splash of Metaxa to taste and simmer for about 10 minutes. Season with pepper, salt, and paprika and reduce the heat for another 15 minutes. Add the cream and heat briefly. Then serve. Delicious with potatoes, rice, pasta, grilled food, white bread, fish, and much more.
