Metaxa sauce

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • olive oil
  • ½ red bell pepper(s)
  • 1 small jar of Metaxa
  • 1 small jar of white wine
  • ½ liter cream
  • 2 tbsp tomato paste
  • salt and pepper
  • some sauce thickener

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Recipe from Greece

Finely chop the onion and sauté in olive oil. Peel and dice the bell peppers, add them, and sauté briefly. Deglaze with the Metaxa and wine. Pour in the cream, add the tomato paste, and season with salt and pepper. Bring the sauce to a boil while stirring, then thicken with a sauce thickener. I also like to use whole bell peppers and a little more Metaxa, as per the recipe. It goes perfectly with pork medallions or lamb chops.
