Metaxa vegetable stir-fry

Ingredients for 2 servings:

  • 2 tbsp olive oil
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 zucchini
  • 1 carrot(s)
  • 1 handful of cauliflower florets
  • 100 g mushrooms
  • 200 ml cream
  • 4 tbsp Metaxa or Ouzo
  • 1 tsp tomato paste
  • 1 ½ tsp soy sauce, dark
  • 2 tsp paprika powder
  • 2 tsp spice mix (meat and gyro spice)
  • 1 tsp oregano
  • 1 tsp black pepper, freshly ground
  • ½ tsp nutmeg
  • e.g. parsley
  • n. B. Salt
  • n. B. cheese, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

tastes very good even vegan

Wash and dry the vegetables, clean the mushrooms. Dice the zucchini and carrot, and halve the mushrooms. Finely chop the onion and garlic. Gather the remaining ingredients. Heat the olive oil in a pan and first sauté the onion. Then lightly sauté the remaining vegetables and garlic. Add the cream, Metaxa, tomato paste, and soy sauce and fold in. Add the remaining ingredients and cook, stirring occasionally. Season to taste, garnish as desired, and serve. Tip: The vegetables are a perfect side dish to Greek main courses such as pan-fried gyros, souvlaki, or bifteki. They are also suitable as a side dish for barbecues, or can be topped with cheese as a casserole or served with pasta or rice. The vegetables can be varied according to taste or to suit your needs. If you use soy-based cooking cream and omit the cheese, the dish is also vegan.
