Mexican Fajitas

The perfect mexican fajitas recipe with a picture and simple step-by-step instructions.

  • 1 piece Wraps
  • 250 g Pork tenderloin
  • 1 piece Onion red
  • 1 piece Red peppers
  • 1 piece Avocado
  • 1 piece Tomato
  • 1 piece Lettuce hearts
  • 1 piece Chilli pepper
  • 1 piece Lime
  • 100 g Yogurt
  • 0,5 tsp Kumin spice
  • 3 tsp Olive oil
  1. Chop half of the onion and cut the other half into fine strips.
  2. Core the chilli pepper and chop very finely.
  3. Wash and finely chop the tomato.
  4. Cut the bell pepper into fine strips.
  5. Wash the lime with hot water and rub the peel off.
  6. Cut half of the lime into wedges + put aside [we only need it when serving].
  7. Cut the lettuce into large pieces after washing.
  8. Cut the meat into thin strips – set aside for a moment. Now it goes on with the guacamole … 🙂

Preparation of the guacamole:

  1. Remove the core and shell from the avocado. Puree the pulp in a bowl (works very well with a fork). Add 1 teaspoon of lime juice + a little lime zest, season with salt + pepper and set aside (the whole thing must now steep).

Preparation of the salsa:

  1. In another bowl, mix the tomato pieces, onion pieces, chilli pepper (quantity as desired) together with 1 teaspoon oil, season with salt + pepper. Also put aside …
  2. Now the oven should be preheated to 180 ° C (with top / bottom heat).
  3. Heat 1 teaspoons of oil in a pan: The onion and pepper strips are braised in this for approx. 5 minutes. Then remove from the pan and set aside.
  4. In the same pan, heat 1 teaspoon of oil again. Fry the meat strips for approx. 2 minutes until crispy.
  5. After the 2 minutes add peppers + onions along with the cumin, 2 tablespoons of water and 1 teaspoon of lime juice. The whole thing now has to cook for another 4 minutes. Season to taste with salt + pepper.
  6. While it is cooking, the wraps are warmed up in the oven for about 4-5 minutes.
  7. So: Now put the wraps on a plate. The wrap is coated with guacamole, the meat-onion-paprika mixture is spread in the middle. At the top, add about 1 tablespoon of tomato salsa. At the end, a dollop of yogurt is added on top.
  8. The wrap is now rolled up and served with lime wedges. Enjoy your meal! 🙂
