Ingredients for 4 servings:
- 1 small onion(s)
- 1 garlic clove(s)
- 2 tbsp olive oil
- 500 g minced meat, mixed
- 1 can of corn
- 2 large tomatoes
- 1 bottle of sauce (salsa)
- 4 tortillas
- 100 g cheese (e.g. Gouda), grated
- 200 g crème fraîche or sour cream
- 2 tbsp lemon juice
- Salt
- Cayenne pepper
- Thyme
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel and finely dice the onions and garlic. Heat the oil in a pan. Brown the ground beef with the onions and garlic, and season with thyme, salt, and cayenne pepper. Drain the corn and add it to the ground beef. Wash, quarter, and deseed the tomatoes, then cut the flesh into small cubes. Add the diced tomatoes to the ground beef, stir in the salsa, and bring to a boil briefly. Fill the tortillas with 2/3 of the ground beef mixture and roll them up tightly. Spread the remaining ground beef mixture over the bottom of a large baking dish and place the tortillas, which have been cut in half crosswise, into the dish. Mix the grated cheese with the crème fraîche or sour cream, and season with a little lemon juice. Spread the mixture onto the individual tortilla rolls and bake in a preheated oven (175°C fan/convection oven) for about 30 minutes.
