Mexico – Barbecue sauce

Ingredients for 1 servings:

  • 1 kg zucchini
  • 1 kg bell pepper(s), red, yellow, green
  • ½ kg onion(s)
  • ¼ liter of oil
  • 1 ½ liters tomato ketchup
  • chili powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the zucchini, bell peppers, and onions in a food processor. Heat the ketchup and oil in a saucepan. Add the pureed vegetables to the pan. Season with chili powder to taste. Bring the mixture back to a boil while it’s still hot, then pour into jars and seal. (Makes about 8 0.4-liter jars.) I use this sauce not only for barbecues, but also to flavor other sauces, such as goulash or spaghetti sauce.
