Ingredients for 1 servings:

  • 100 g butter, soft
  • 50 g sugar
  • 1 pinch of salt
  • 2 tsp milk
  • 175 g flour, sifted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

simple basic recipe with many variations, makes about 24 pieces

Cream the butter, sugar, and salt until fluffy. Knead with the flour and milk (measured as needed) until you have a smooth, firm dough. Divide the dough into four equal pieces and form six balls from each piece. Place these in a circle on a large, flat plate lined with baking paper. Flatten the balls with a fork or the back of a spoon, ensuring there is enough space between them. Microwave at 450 watts for 3.5-4.5 minutes. Test after about 3 minutes on the first load, as even with the same wattage, different appliances can produce different results. Once the cookies are done, let them stand for 5 minutes (during this time they will firm up), then cool on a wire rack. Once cooled, the cookies can be decorated with chocolate or icing and garnished as desired. Variations: Vanilla cookies: Add 1 tsp ground vanilla to the dough Cinnamon cookies: Add 1/2 tsp cinnamon to the dough Chocolate cookies: Add 25g cocoa or 50g grated chocolate to the dough Almond cookies: Add 2-3 drops of bitter almond flavoring to the dough and press the flattened balls into chopped almonds Coconut cookies: Add 50g coconut flakes to the dough Rum cookies: Replace the milk with rum (or other alcohol as desired) You can also add chopped candied fruit, raisins or nuts, the sky is the limit.
