Microwave zucchini soup

Ingredients for 4 servings:

  • 400 g zucchini, cleaned, diced
  • 600 ml vegetable stock
  • 100 g cheese, grated
  • 100 ml sweet cream
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Microwave the zucchini with 150 ml of broth for 10-15 minutes at 600 watts, then puree with a hand blender. Add the remaining broth and heat for another 5 minutes at 600 watts. Add the grated cheese and cream, and season with salt and pepper.
