Mighty vegetable meatballs

Ingredients for 4 servings:

  • 450 g leek, cut into fine strips
  • 200 g carrot(s), grated
  • 100 g celery, grated
  • 100 g kohlrabi, grated
  • 1 tbsp oil
  • 1 tbsp water, cold
  • 70 g wheat bran, or crushed wheat
  • 100 g breadcrumbs
  • 150 g Cheddar cheese, grated
  • 1 egg(s)
  • n. B. garlic
  • 1 tsp thyme, finely chopped
  • 1 tsp marjoram, finely chopped
  • salt and pepper
  • Flour for working

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegetarian

Cook all the vegetables in a pan with the oil and water until al dente. Then let cool. Then mix in the flour and breadcrumbs thoroughly and add the remaining ingredients. The mixture should be firm. Now, with floured hands, form meatballs and fry them in the pan on both sides. Alternatively, the meatballs can also be baked on both sides in the oven. I personally prefer the pan. A little tip: If the mixture is too mushy, simply add more breadcrumbs or cracked wheat. You can also use feta cheese instead of cheddar cheese.
