Mild apple red cabbage

Ingredients for 12 servings:

  • 1 kg red cabbage (net weight)
  • 500 g apples, red (net weight)
  • 2 m.-sized onion(s)
  • 2 tbsp oil
  • 2 tsp salt
  • ½ tsp all-spice
  • ½ tsp clove powder
  • 250 ml apple juice
  • 2 tbsp honey or fruit syrup

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Clean and coarsely grate the red cabbage. Clean, peel, and finely slice the apples. Peel and finely chop the onions. Heat the oil in a large saucepan. Lightly fry the onions. Add the apples and red cabbage with a splash of water to prevent burning. Sauté for a few minutes, stirring occasionally, then add the apple juice. Stir in the spices. Let it cook for 5 minutes, then reduce the heat. Simmer on low heat for 30-40 minutes, stirring frequently and mixing from top to bottom to ensure the red cabbage cooks evenly. Finally, season with honey or syrup. The apple-flavored red cabbage also freezes very well; that’s why I usually make the entire batch and freeze what I don’t use right away.
