Ingredients for 4 servings:

  • 300 g cucumber(s)
  • Salt
  • 150 g apples, slightly sour, red
  • 8 herring fillet(s), mild
  • 4 tbsp vinegar (white wine)
  • 2 tbsp thick juice (apple)
  • 4 tbsp rapeseed oil
  • 1 tbsp pumpkin seed oil
  • 1 bunch of chives
  • 200 g sour cream
  • salt and pepper
  • 1 onion(s), red
  • some cress

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Early summer enjoyment

Peel the cucumber and slice thinly, sprinkle with salt, and drain in a colander. Wash and dry the apples thoroughly. Halve, quarter, core, and cut into thin wedges. For the dressing, mix the ingredients well, one after the other. Mix the cucumber and apple and toss in the dressing. Refrigerate for 20 minutes. Finely chop the chives and mix with the sour cream, pepper, and salt. Peel the onion and slice them into thin rings. Form the fish fillets into small towers on the plate and pour in the chive cream. Arrange the cucumber and apple salad around the salad, garnishing with the onion rings and cress.
