Minced meat and potato soup

Ingredients for 2 servings:

  • 4 potatoes
  • 4 m.-sized carrot(s)
  • 250 g minced meat, mixed
  • 200 ml vegetable stock
  • 400 g tomatoes, pureed
  • 1 clove(s) garlic
  • 1 m.-sized onion(s)
  • salt and pepper
  • Paprika powder, hot
  • herbs, Italian

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with strained tomatoes and carrots

Peel and dice the potatoes, carrots, onion, and garlic clove. First, briefly fry the minced meat in a hot pan with oil, then add the diced onion. Cook for 5 minutes, then add the remaining vegetables and fry briefly. Then add the passata and vegetable stock and simmer over medium heat for about 20 minutes. Season to taste with salt and pepper. If desired, add paprika and Italian herbs. Cooking time varies depending on the size of the diced meat and the desired crunch. It also tastes great reheated.
