Minced Meat Baskets with Garlic Dip

The perfect minced meat baskets with garlic dip recipe with a picture and simple step-by-step instructions.

dough

  • 300 g Wheat flour
  • 1 Egg
  • 0,5 tsp Salt
  • 3 tbsp Olive oil
  • 50 ml Lukewarm milk
  • 25 ml Lukewarm water
  • 1 pinch Sugar
  • 20 g Yeast

filling

  • 400 g Ground beef
  • 1 Egg
  • 2 middle Tomatoes, pitted, de-stemmed and cut into fine cubes
  • 1 Shallot, finely diced
  • 2 Branches Fresh oregano, chopped
  • Cinammon
  • Cumin
  • Salt
  • Black pepper from the mill

garlic dip

  • 500 g Turkish yogurt
  • 2 Garlic cloves
  • Fleur de sel
  • 1 Lime, zest and juice

Preliminary remark

  1. These little things can be enjoyed hot or cold. They also taste really good cold. Therefore, they are ideal for a picnic. The filling can be varied according to your own taste and your own taste writes the recipe here. And for a buffet, this is also suitable as finger food.

garlic dip

  1. I always start with the garlic dip, as it has to go through for a good 3 hours. To do this, put the yoghurt in a bowl, add the lime zest and the garlic cloves very finely, stir until smooth and season with lime juice and fleur de sel and then let it steep in the refrigerator.

dough

  1. Put the lukewarm milk together with the lukewarm water in a container, add a pinch of sugar (really not more than a pinch) and then crumble the yeast in and dissolve it.
  2. Put the flour with the salt in a bowl, mix well, add the egg and olive oil and now add the dissolved yeast mixture and work everything well into a smooth dough, cover with a cloth and leave for about 60 minutes in a warm place let the dough double in size.

filling

  1. Put the minced meat in a bowl, add the egg, the diced shallot, the diced tomatoes and the chopped oregano, season with salt, pepper, cinnamon and cumin and then work everything into a homogeneous dough.

Assembly and finish

  1. Preheat the oven to 250 degrees and line a baking sheet with parchment paper. Lay out a little flour for the work surface, a rolling pin and a round cookie cutter – approx. 8-.9 cm.
  2. Now roll out the dough thinly in portions on a floured work surface and cut out circles with the round cutter. Generously pour the filling onto each circle with the tablespoon and press something on with the back of the spoon.
  3. Now you have to imagine something like a crosshair under each circle. For clarity and for the photos I have recreated that with two pieces of Baker’s Twine. Now we first take the dough on the left and right side between two fingers and press it together, then on the other two ends – this automatically results in a rectangular shape.
  4. Now place these baskets on a baking sheet and bake on the middle rack for about 20 – 25 golden brown and then serve with the garlic dip.
