Ingredients for 4 servings:
- 3 onions, diced
- 1 tbsp butter
- 1 slice(s) of toast
- 250 ml milk
- 1 ½ tbsp vinegar
- 1 tbsp apricot jam or brown sugar
- 2 tbsp curry
- 1 tsp salt
- pepper
- 3 tbsp almonds, chopped
- 1 kg minced beef (beef mince)
- 2 eggs
- 6 bay leaves
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Bobotie (South Africa)
Fry the diced onions in melted butter until translucent. Soak the white bread in 125 ml of the milk, squeeze out the excess water, and add it to the onions. Add the vinegar, jam, curry powder, salt, pepper, and chopped almonds and stir well. Add the shredded ground beef and fry. Season again with sweet, sour, and spicy seasoning. Spread the mixture into a baking dish. Whisk the remaining 125 ml of milk with the eggs and pour over the mixture. Stick the bay leaves into the mixture. Bake in a hot oven at 160°C (top/bottom heat) for about 30 minutes. Serve with rice, chopped bananas, sambal oelek, and fruity chutney.
