Ingredients for 3 servings:
- 1 kg minced meat, mixed
- 2 rolls, from the day before or breadcrumbs
- 2 eggs
- 2 onions, diced
- salt and pepper, pepper
- 1 can pineapple (slices), drained weight approx. 490 g
- possibly fat, for the pan
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Soak the rolls in cold water and squeeze out any excess water. Mix the minced meat with the eggs, onions, and squeezed-out rolls (or breadcrumbs). Season with salt and pepper. Drain the pineapple slices well and pat dry. Cover each pineapple slice with the minced meat mixture, leaving a hole in the middle free. This works best if you flatten a handful of the meat mixture on a cutting board, place the pineapple slice on top, and then fold the ends of the meat mixture upwards. You can then either fry the minced meat donuts in a pan in hot fat (turn carefully), or line a grill rack with aluminum foil and cook the donuts in the oven at 200°C for about 20-25 minutes using top/bottom heat. The surface stays more evenly smooth in the oven than in a pan.
