- 2 handful Young green beans
- 2 handful Savory
For the wrong hollandaise sauce
- 1 shot Orange oil
- 2 tbsp Flour
- 2 tbsp White wine
- Salt pepper
- Butter flakes
For the meatballs
- 300 gr. Rinderhack
- 1 große Möhre
- 1 kleine Zucchini
- 1 große Zwiebel
- 2 Eier
- Homemade breadcrumbs

My fake hollandaise sauce
- Put some orange oil in a saucepan, sweat out the flour in it, deglaze with the white wine and give the sauce a good consistency, add wine if necessary and then season everything with salt & pepper, finally stir in the flakes of butter – done quickly
The beans….
- 3 ….. remove both ends, roughly shingle and boil in salted water. But I’ve only cooked them long enough that they still stay firm to the bite and nice and green. Wipe the boiling water with a slotted spoon and rinse in an ice bath.
- Then put the beans in the hollandaise souce, cut the savory into small pieces, add to it, season with pepper and a little vegetable stock … and let it steep until the meatballs are done.
The meatballs ….
- Put all the ingredients one by one in the kitchen fairy, chop up and process into a dough (let it) then put the dough in a bowl and let it rest for about 15 minutes (the breadcrumbs will still absorb some moisture, the dough will be smoother)
- Then, depending on the size, shape meatballs from the dough and fry them in the hot fat. I shaped the rest of the dough into a large meatball and baked it in the middle of the pan, you can eat it cold, or … or … or …..
- The smaller meatballs went with the bean vegetables and a few jacket potatoes.
