Minestrone Milanese style à la Gabi

Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 60 g smoked bacon, streaky, diced
  • 1 bunch of flat-leaf parsley, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 sage leaf, finely chopped, or 1 pinch of dried sage
  • 2 medium-sized onions, finely chopped
  • ½ celery root, peeled, chopped
  • 2 large carrots, peeled and finely chopped
  • 1 leek(s), finely chopped
  • 4 tomatoes, finely chopped
  • 300 g white cabbage, finely chopped
  • 250 g potatoes, peeled, diced
  • ½ head of savoy cabbage, finely chopped
  • 250 g beans, white, fresh
  • some basil leaves, finely chopped
  • 1 ½ liters of meat broth, possibly instant
  • Salt and pepper, black, from the mill
  • 125 g ravioli or tortellini, fresh
  • e.g. Parmesan, freshly grated

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 55 minutes; Total time approx. 2 hours 35 minutes

Heat the olive oil in a large pot and fry the bacon. Add the parsley, garlic, sage, and onions and fry briefly. Add the celery, carrots, leeks, tomatoes, white cabbage, potatoes, savoy cabbage, beans, and basil. Pour in the meat broth, season with salt and pepper, and simmer covered over low heat for 1 3/4 hours. 12 minutes before the end of the cooking time, add the pasta and continue cooking. Season with salt and pepper, if desired, and serve sprinkled with Parmesan cheese.
