Ingredients for 1 servings:
- 340 g flour
- 1 tbsp dry yeast
- 2 tbsp sugar
- 1 tsp salt
- 25 g butter
- 90 ml milk
- 70 ml water
- 2 egg yolks
- 2 tbsp sesame seeds
- 400 g minced meat
- salt and pepper
- 4 slice(s) cheese, e.g. Cheddar
- 10 slice(s) onion(s)
- 10 lettuce leaves
- 10 slice(s) of tomato(s)
- 250 g mayonnaise
- 2 tbsp ketchup
- 2 tsp mustard
- 2 tsp cornichon(s), finely chopped

for 10 pieces – for the buffet
Makes 10 mini burgers, for example, for a buffet, as a welcome treat, or for a child’s birthday party. For the buns: Mix the flour, yeast, sugar, and salt in a bowl. Heat 70 ml of water and melt the butter in it. Remove the pan from the heat and add the milk. Let it cool to about 50 degrees Celsius, then check the temperature with a thermometer. Add the flour mixture and knead everything together. Gradually add the egg yolk and continue kneading until the dough is smooth and elastic. Form into a ball and let it rise at room temperature for about 2 hours. The dough should double in size. Shape the dough into 10 equal-sized buns and place them in round, greased, and floured tins, such as muffin tins with a diameter of about 6 cm and a height of 2 cm. Place the tins on a baking sheet and dust the dough with a little flour. Cover with cling film and let it rise for at least another hour, until it has doubled in size. Preheat the oven to 220°C. Brush the rolls with a little milk, sprinkle with sesame seeds, and bake for about 10 minutes until golden brown. Remove the rolls and let them cool. For the topping: Form the minced meat into 10 patties. Don’t press them together too tightly; it cooks much better that way. Grill the meat patties in a little butter or oil over medium heat, lightly seasoning with salt and pepper. Press the meat down with a spatula, then turn and cook on the other side for about 3-5 minutes, also lightly seasoning with salt and pepper. Optional: Top the grilled side with cheese slices at the end. The cheese will melt while the meat continues to cook. For the special sauce: Whisk together mayonnaise, ketchup, mustard, and gherkin pieces. To serve: Cut the rolls open and toast them in a little butter, if desired. Spread the bottom halves with the special sauce and top with the onion slices. Place the meatballs on the bottom half of the bun and garnish with lettuce leaves and tomatoes, if desired. Then place the second half of the bun on top and secure it with a skewer. You can also place two meatballs in the burger, but you’ll need to buy twice as much ground beef. If you don’t want to make the buns yourself, you can also cut 10 small buns out of five store-bought large hamburger buns.
