Mini Cheese Muffins

  • 120 g Fine oat flakes
  • 1 packet Baking powder

  • 0,5 teaspoon Salt
  • 0,125 teaspoon Ground pepper white
  • 125 g Grated cheese
  • 1 Egg
  • 60 ml Oil
  • 350 g Buttermilk
  • 50 g Grated cheese

  1. Preheat the oven to 180 ° C, grease the recesses in the muffin tray
  2. Clean and wash the leek and cut into small cubes. Finely dice the ham and onion as well.
  3. Carefully mix the flour, oatmeal, baking powder, baking soda, salt, pepper, onion, leek, ham and cheese in a bowl.
  4. Lightly whisk the egg in another bowl. Add the oil and buttermilk and stir well. Add the flour mixture and stir only until the dry ingredients are moist.
  5. Pour half of the batter into the muffin pan and sprinkle with cheese. Bake in the oven – middle rack – fan oven 160 ° C – approx. 15 minutes. Let rest in the tray for 5 minutes then place on a wire rack. Pour the rest of the dough into the mold and finish baking as described above.
  6. If you don’t have a mini baking pan, bake it in the normal muffin pan – then the mixture is 12 pieces.
