Mini pizza made from tortilla flatbreads

Ingredients for 4 servings:

  • 1 flour tortilla(s)
  • 4 tbsp tomatoes, pureed
  • salt and pepper
  • Herbs, Italian
  • 3 cocktail tomatoes
  • ½ mini salami (Bifi)
  • ¼ bell pepper(s), yellow
  • ¼ bell pepper(s), red
  • Cheese, grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

with peppers, mini salami and mozzarella

Preheat oven to 210°C (top and bottom heat). Using a glass and a knife, cut 4 small tortillas from the flour tortilla. Season the tomato sauce with Italian herbs, salt, and pepper. Halve the cherry tomatoes. Slice the Bifi. Finely dice the bell peppers. Place the tortillas on a baking sheet lined with parchment paper. Spread with the sauce. Top two pieces with bell peppers and Bifi. Top the other two with the tomato halves. Sprinkle all 4 with cheese. Bake the mini pizzas in the preheated oven for about 15 minutes until golden brown and enjoy while still hot.
