Ingredients for 4 servings:
- 1 organic lime(s)
- 250 g mayonnaise
- 150 g whole milk yogurt
- Cayenne pepper or pepper
- 2 chicken breast fillets (200 g) each
- 20 g ginger
- 3 tbsp soy sauce
- 2 eggs
- 5 tbsp flour
- 150 g breadcrumbs
- 4 tbsp clarified butter

Finely grate the lime zest using a grater. Don’t forget to wash it first! Then mix the mayonnaise with the yogurt and the grated lime zest, and season with cayenne pepper or pepper. Cut the lime into wedges. Now cut the chicken breast fillets into 1 cm wide slices (I used about 18 slices). Peel and finely grate the ginger. Place the ginger in a bowl with the soy sauce and eggs and whisk vigorously with a fork. Add the flour to another bowl and the breadcrumbs to another bowl. Coat the mini schnitzels in the flour, then tap off any excess flour. Dip the schnitzels in the egg and coat with breadcrumbs. Heat the clarified butter in a large pan and fry the schnitzel strips over medium-high heat until golden brown. For me, this takes about 2 minutes per side. Drain on a paper towel. Serve garnished with mayonnaise and lime wedges.
