Mini Schnitzel with Green Asparagus

- 400 g Cutlet
- 1 Egg
- Bread flour
- 800 g Asparagus green
- Salt
- Pepper
- 1 pinch Sugar
- Clarified butter
- 3 Discs Gouda cheese
- Put the egg in a bowl and whisk with a fork, put the breadcrumbs in another bowl and place next to it.
- Cut the schnitzel into three parts, season with salt and pepper, turn first in the egg and then in the breadcrumbs and fry brown on each side in the hot clarified butter.
- Cut off the lowest part of the asparagus and cook the asparagus stalks in salted water with a pinch of sugar.
- Finally, place half a cheese slice on each schnitzel slice and let it melt in the closed pan.
- It was served with boiled potatoes and hollandaise sauce
