goes quickly – not just for guests, makes about 60 pieces

Makes about 60 pieces. Cut the rolled out puff pastry into small squares (about 2.5 x 2.5 cm) and place on two baking sheets lined with baking paper. Mix the cheese with the sour cream, season well and place about 1/2 teaspoon of the cheese mixture on each piece. Bake in the oven at 170°C (fan oven) for about 15-20 minutes until golden brown. Instead of sour cream you can also use sour cream or crème fraîche. For the cheese I recommend a mixture of Emmental and Parmesan or Gouda and smoked cheese. You can get delicious variations by adding two finely chopped spring onions or a bit of ham to the cheese mixture. You can also cut out any shapes you like from the dough using cookie cutters. Cutting out squares is simply the quickest way and doesn’t waste any dough. These quick snacks are a hit with champagne or at any finger food party!
