Mint-lemon balm syrup

Ingredients for 1 servings:

  • 6 sprigs of fresh mint
  • 1 bunch lemon balm
  • 2 lemons
  • 1 kg sugar
  • 3 liters of water

Instructions

Working time approx. 25 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 25 minutes

hot or cold, for alcoholic or non-alcoholic drinks, always refreshing

Wash the mint and lemon balm thoroughly and place the stems and leaves in a large saucepan. Slice the lemons, add them, and cover with water. Bring everything to a boil once, then let it steep overnight. The next day, remove the ingredients from the liquid. Then thoroughly filter the liquid through a clean tea towel (also squeezing the tea towel) and bring to a boil again with the sugar. Then pour the hot syrup into sterilized bottles and briefly (5 seconds) turn them upside down. Tip: Fresh mint syrup makes a delicious base for summer refreshments. It will keep for several weeks in the refrigerator. Makes about 3 liters of syrup.
