Mint – Raspberry – Jelly

Ingredients for 1 servings:

  • 50 g peppermint
  • 400 ml raspberry juice
  • 500 ml sparkling wine
  • 1.3 kg gelling sugar (1:1)
  • 150 ml water

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

for approx. 8-9 glasses of 230 ml each

Pick the mint leaves, rinse with cold water, and pour 150 ml of boiling water over them. Let it steep for at least 1 hour. Then pour through a sieve and mix with the raspberry juice, sparkling wine, and gelling sugar in a large saucepan. Bring to a boil and simmer for 4 minutes, stirring continuously. Immediately pour the jelly into hot, rinsed, twist-off jars and seal tightly. Let stand with the lids upside down for 5 minutes.
