Ingredients for 8 servings:
- 1 jar of mirabelle plums (about 800ml)
- 500 g natural yogurt
- 200 g cream cheese
- 1 lemon(s) (juice and zest)
- 1 packet of vanilla sugar
- Sugar
- 12 sheets of gelatin
- 2 tbsp sugar
- 200 ml whipped cream
- Chocolate shavings
- Lemon balm or mint leaves
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Pit the mirabelle plums, if necessary, and puree them with their juice. Mix with yogurt, cream cheese, lemon juice, finely chopped lemon zest, and vanilla sugar, and season with sugar to taste. Soften and dissolve the gelatine according to the package instructions. Stir 3 tablespoons of mirabelle plum cream into the gelatine, then stir the gelatine-mirabelle plum mixture into the entire mirabelle plum cream. Chill until the mixture begins to set. Meanwhile, whip the cream with the sugar until stiff and fold into the cream. Pour into serving glasses and chill. Serve garnished with chocolate shavings and lemon balm or mint leaves.
