Tomato chutney

Ingredients for 8 servings:

  • 1,750 g tomatoes
  • 350 g onion(s)
  • 175 g raisins
  • 125 g prunes or dried apricots
  • 1 ¼ cup(s) vinegar (fruit vinegar)
  • ½ cup(s) brown sugar
  • 1 tsp ground ginger
  • 1 tsp cayenne pepper
  • 2 ½ tbsp salt
  • ½ tsp clove(s), ground
  • 1 ½ tsp coriander, ground
  • 1 tsp mustard seeds

Instructions

Working time approx. 2 hours; Total time approx. 2 hours

Blanch the tomatoes, peel off the skin, halve, and cut into fairly thick slices. Peel and finely chop the onions. Slice the dried fruit. Place all ingredients in a large enamel pot and simmer until a fairly thick mixture forms. Allow more than an hour for this to cook. Fill hot, sterile jars with the chutney to within 5 mm of the rim and seal immediately. The full flavor will develop over time. Makes 1.25 to 1.5 liters.
