Ingredients for 1 servings:

  • 1 bottle of vodka
  • 250 g mirabelle plums
  • 150 g sugar, white
  • 10 g citric acid
  • a little vanilla sugar

Instructions

Working time approx. 30 minutes; Rest period approx. 45 days; Total time approx. 45 days 30 minutes

Wash and pit the mirabelle plums. Place them in a suitable infusion container. Add 3-5 stones to the container for infusion. Then add the infusion liquor, sugar, and citric acid. You can add vanilla sugar if you like, but it’s not necessary. Vodka is best as an infusion liquor because it’s neutral in flavor. Plum brandy is also fine. It should always be around 38-40% ABV to prevent the fruit from spoiling. Let it steep in a cool, dark place for about 6 weeks, shaking occasionally. Strain, then filter, and bottle the liqueur. Let it mature for another 4 weeks before enjoying.
