Mirabelle plum soup

Ingredients for 6 servings:

  • 650 g mirabelle plums
  • 90 g sugar
  • 20 g pudding powder, vanilla
  • 150 ml milk
  • 1 tsp lemon zest, grated

Pit the mirabelle plums and place them in a saucepan with 50g of sugar. Stir in the sugar well and cook the mirabelle plums in a covered pan for about 10 minutes until soft (stirring occasionally). In the meantime, mix 20g of vanilla pudding powder with 1 teaspoon of grated lemon zest and 40g of sugar. Dissolve in 50ml of milk. After 10 minutes, remove the mirabelle plums from the heat and mash thoroughly with a potato masher. Strain through a sieve until 400ml of liquid has been collected. Add the remaining 100ml of milk and stir in the vanilla pudding powder. Return to the heat and bring to a boil, then let it bubble briefly. Chill thoroughly in the refrigerator before serving. A fresh dessert for summer days.
