Mixed bean goulash

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 onion(s), chopped
  • 2 garlic cloves, chopped
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp cardamom powder
  • 1 tsp ginger powder
  • 1 tsp sea salt
  • 1 tsp mountain pepper, green, freshly ground
  • 2 tbsp tomato paste
  • 200 ml water
  • 400 g tomatoes, chopped from the can
  • 1 tsp brown sugar
  • 50 g peas, frozen
  • 200 g runner beans, frozen
  • 400 g mixed beans from the can
  • 2 tbsp lovage, fresh
  • 180g pasta

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

vegan

Heat the oil in a saucepan and fry the onions for 3 minutes, stirring. Add the garlic and all the spices except the lovage. Mix well, add the tomato paste, and fry for another 2 minutes. Cook the pasta according to the package instructions until al dente, drain, and keep warm. Add the water, the canned tomatoes, and the sugar to the pan. Bring to a boil and add all the vegetables. Cover and simmer for 30 minutes. Wash and chop the lovage, and add it to the goulash. Season to taste and serve with the pasta. https://www.vegan-cooking-with-thalija.de/archive/1131
