Mixed Mushroom Sauce with Beef Strips on Maccheroni Al Ferreto

The perfect mixed mushroom sauce with beef strips on maccheroni al ferreto recipe with a picture and simple step-by-step instructions.

  • 25 g Dried chanterelles
  • 25 g Dried porcini mushrooms
  • 25 g Dried shitaki mushrooms
  • White wine and milk mixture to soak
  • 50 g Diced bacon
  • 250 g Beef steak
  • 250 ml Cremefine or cream
  • 50 ml White wine
  • 1 Onion, diced
  • Chives
  • 1 Spring onions fresh, cut,
  • Salt from the mill,
  • Tellicherry pepper from the mill,
  • Sweet paprika,
  • Dried garlic from the mill,
  • Freshly grated nutmeg
  1. Soak the dried mushrooms in a vessel with a little white wine and milk (so that it is covered) for about 2 hours. When the mushrooms are softened, drain them over a sieve, collecting and reserving the mixture.
  2. Peel and dice the onion. Cut the spring onion and chives into rings. Cut the beef steak into thin strips.
  3. Sear the bacon cubes in a hot pan, remove and reserve. Sear the beef steak strips, then add the diced onion and fry. Now add the bacon cubes and mushrooms and fry again briefly, season with salt, pepper, garlic, nutmeg and paprika and deglaze with the white wine. Mix in the chives and spring onions, add Cremefine and add part of the mushroom pickling mixture to taste and simmer the sauce until it is reduced a little. Season again to taste.
  4. In the meantime, cook the maccheroni al ferreto in salted, boiling water and prepare a salad to taste.
  5. Now serve and garnish with a little chives and spring onions and enjoy.
