Mixed Rocket Salad with Cranberries and Fresh Goat Cheese

Ingredients
 

  • 60 g Arugula
  • 50 g Goat cream cheese
  • 3 Cocktail vine tomatoes
  • 2 Baby peppers
  • 20 Fresh cranberries
  • 1 Shallot
  • 0,5 tablespoon Flower honey
  • 1 teaspoon Extra virgin olive oil
  • 1 teaspoon Balsamic vinegar with date
  • 4 Basil leaves
  • Cubeb pepper
  • Espelette pepper

Instructions
 

  • Cut the cranberries into slices and mix with the honey. Put aside.
  • Cut the shallot and bell pepper into rings. Cut the tomatoes into slices. Place on a plate with the rocket. Add the cranberries. Pepper and mix well. Add the balsamic vinegar.
  • Cut the goat cream cheese into slices and place on the basil leaves. Add to the salad. Pour some Espelette pepper and the olive oil over the cheese.
  • Serve immediately.
