Mixed Salad with Cheese Cream Dressing

  • Lamb’S lettuce (Rapunzel)
  • Bieta Rossa (Red Swiss Chard)

for the dressing

  • Raclette cheese
  • Milk 3.8%
  • Lemon pepper
  • White balsamic vinegar
  • Acacia honey
  • Lime salt
  • Nut oil

  • Natural yoghurt

The salad

  1. Clean the lamb’s lettuce and chard well and spin dry.

The dressing

  1. The first thing to do is to remove the rind from the cheese. Now cut into small cubes. Slowly heat the milk in a saucepan and stir in the cheese at the same time. IMPORTANT: >>> Do not bring to the boil – at best, the cream should be at “finger-touch temperature” afterwards.
  2. When the cheese is completely dissolved, remove the saucepan from the heat and stir in the spices, vinegar and oil. Now let the dressing cool down. When it has cooled down, stir in the yogurt.
  3. Now fill the finished cheese cream sauce / dressing into a large bowl. Put the well-dried lettuce on top. Now pull the salad all the way through the sauce.

The serving

  1. Not applicable at this point, as the bowl is placed on the table for self-service.
