Sweet Pear and Apple Salad with Chicory and Cheese Dressing

Ingredients
 

  • 2 Heads Chicory [mixed red and white if possible]
  • 1 Apple
  • 1 Pear
  • A mixture of fresh herbs
  • 25 g Blue cheese
  • 25 g Creme fraiche Cheese
  • 3 tbsp Olive oil
  • 2 tbsp Apple Cider Vinegar
  • 3 tbsp Water
  • Chopped walnuts

Instructions
 

  • Cut the chicory heads, wash and dry the leaves. Core the apples and cut into sticks. Core and dice the pears as well. If these are still a little firm, briefly toss in the pan. Otherwise put the fruits with the chicory, apples and most of the herbs in a bowl.
  • For the dressing, puree all the ingredients in the MIxa for about 15 seconds until the mixture is smooth. It should have a distinct trace of acidity, as opposed to the bitter chicory. Pour three quarters of the dressing over the salad and fold through.
  • Arrange the salad on plates and cover each serving with an extra spoon of dressing. Scatter the remaining herbs on top and drizzle with a few drops of extra olive oil. Tastes very good with chopped walnuts. Good Appetite
