Mixed vegetable stew

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • 7 large potatoes
  • 2 gr. can/n mixed vegetables (carrots and peas)
  • 1 onion(s)
  • some salt and pepper
  • some parsley, dried, frozen or fresh
  • some vegetable broth
  • Water
  • 1 sachet of mashed potato powder, for thickening

Working time approx. 15 minutes; Total time approx. 15 minutes

with minced meat, quick and easy

Brown the minced meat in a large pot, dice the onion, and add it. Season with salt and pepper. Dice the peeled potatoes and add them. Add about 2 liters of water, plus the water from the mixed vegetables and 1-2 teaspoons of vegetable stock, and simmer for about 15-20 minutes over medium heat. Add the mixed vegetables 5 minutes before the end to prevent them from overcooking. When the potatoes are tender, season with salt and pepper to taste and add the parsley. Depending on how thick you like the stew, thicken with mashed potato powder. Done.
