Mocha cream

Ingredients for 4 servings:

  • 4 eggs, including the yolk
  • 75 g sugar
  • 6 tsp coffee powder
  • 125 ml water
  • 4 sheets of gelatin
  • 250 ml cream
  • Confectionery (mocha beans)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the egg yolks and sugar until frothy. Dissolve the instant coffee in lukewarm water and stir into the foam mixture. Dissolve the gelatin in a little water, carefully stir into the mixture, and let it rest for 10 minutes. Whip the cream until stiff peaks form and fold half of it into the cream mixture. Pour into glasses and garnish with the remaining whipped cream and the mocha beans.
