Ingredients for 2 servings:
- 2 large chops or 4 small, thin
- 2 onions
- 2 tsp sugar
- 125 ml meat broth
- 2 tsp instant coffee powder
- 2 tbsp brandy
- salt and pepper
- Rapeseed oil or clarified butter
- n. B. Crème fraîche for binding
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
With coffee, brandy, onions – a different kind of cutlet
Season the chops with pepper and salt, and brown in oil or clarified butter. Remove from the pan. Sauté the onions in the meat juices until translucent, then pour in the broth. Add the sugar, brandy, and coffee to the sauce and bring to a boil briefly. Season with crème fraîche. Return the chops to the sauce, let them simmer for a few minutes, but do not allow them to boil again. It’s important to follow the instructions exactly. Too much coffee or brandy will ruin the flavor of the sauce. Serve with boiled potatoes and vegetables, or a salad.
